Spirulina Avocado Cucumber Bites

These bites are wonderful to serve at a party or to make and serve as an appetizer before a meal.

Makes 6 to 8 bites

Ingredients:

- 1 large organic cucumber
- 1 ripe avocado
- pinch of Kosher salt
- 1/2 ripe organic roma tomato, diced
- 1 teaspoon fresh lime juice
- 1/2 teaspoon Hawaiian Spirulina powder
- organic grape tomatoes for garnish


Directions:

Cut cucumber into thick 1 inch slices (you should be able to get 6 to 8 chunks from a large cucumber)

Scoop flesh out from center of cucumber.

Cut avocado in half and scoop out flesh. Mash with a fork and mix with all remaining ingredients except for the grape tomatoes.

Scoop into each cucumber bite and garnish with half a grape tomato. Serve immediately.
