Earth Day Smoothie

This pretty layered green and blue smoothie is easy to make and great for breakfast or as a snack. It's a smoothie you can feel good about for both you and the earth. 

Prep Time: 10 minutes

Servings: 2 smoothies

Green smoothie:

- 2 frozen bananas
- 1 cup frozen pineapple
- 2 teaspoons Hawaiian Spirulina powder
- Oat milk or coconut water to blend (around ½ cup)

Blue smoothie:

- 2 frozen bananas
- 1 cup frozen pineapple + 1 teaspoon blue spirulina OR ½ cup frozen blueberries + ½ cup frozen mango
- Oat milk or coconut water to blend (around ½ cup to)
- Optional scoop of vanilla vegan protein

Optional Whipped Topping Ingredients:

- 1 can full fat coconut milk, refrigerated overnight
- ½ teaspoon vanilla

Directions:

1. Add all the green smoothie ingredients to a blender and blend until very smooth, you can add more milk if desired/needed. Once blended, transfer to a separate bowl or jar and place this in the freezer while you make the blue smoothie.
2. Add all the blue smoothie ingredients to a blender and blend until very smooth. Layer the blue and green smoothies into two jars and enjoy!
3. For the whipped topping, remove only the fat from the top of the coconut milk that has been refrigerated (set aside the remaining coconut water from the bottom of the can, it goes great in smoothies!), add it to a small metal bowl along with the vanilla. Using an electric whisk, whisk until it is fluffy and forms peaks. You can top the smoothies with coconut whip to replicate clouds and a little lime for a “citrus sun”!
