Spirulina Spring Rolls

This super light and tender vegetarian appetizer will hit the spot. With a super thin wrapper outside, tender vegetables and a touch of tofu inside, then topped with a sprinkle of Hawaiian Spirulina powder. Perfect for dipping into sweet chili sauce or your favorite dip.

Ingredients:

- 1 large ripe avocado, sliced into thin strips
- 1 large carrot, cleaned and cut into thin strips
- 3 button mushrooms, sliced
- spinach leaves
- 1 package of extra firm tofu, cut into thin strips
- 1 TSP Hawaiian Spirulina powder
- 3 spring roll wrappers

Directions:

Moisten spring roll wrappers according to package directions. Layer spinach leaves, avocado strips, carrot and tofu and sprinkle with Hawaiian Spirulina. Roll and cut into halves or slices and serve.
