Ginger Bread Pancakes with Spirulina Yogurt "Frosting"

Spice up your breakfast game with some tasty ginger goodness this holiday season.

Serves:4

Prep Time: 10 minutes 

Cook Time: 5 minutes 

Pancakes:

-1 cup oat flour (blend oats into flour)

-1 banana

-1 tbsp coconut sugar 

-1 tsp baking powder

-pinch of salt

-1 tsp cinnamon

-1/2 tsp ground ginger 

-1/4 tsp ground cloves 

-1 tbsp ground flaxseed

-1/2 cup soy milk

-1 tsp apple cider vinegar

-dash of vanilla extract 

Directions:

Mix together 1 tbsp ground flaxseed with 3 tbsp water and set aside to thicken for 5-10 mins. Blend all ingredients together in blender. Pour batter into a greased or non stick pan. Cook on medium heat on the stove for about 3-5 mins each side.
